Cinnamon-Spiced Ice Syrup Milk

I’ve posted about Ice Syrup before; it’s such a unique, Niagara-based flavor that’s made in the same technique as our amazing ice wine. You can get your hands on some from the site linked above, and once you do, don’t neglect it on your pancakes, either. If you’re in the mood for a non-coffee, non-tea warm winter drink, this is the one.

Cinnamon-Spiced Ice Syrup Milk

2 cups creamy unsweetened nondairy milk, such as So Delicious Coconut Milk
1/4 teaspoon cinnamon
2 teaspoons Ice Syrup
1/4 teaspoon vanilla extract

Put the nondairy milk and cinnamon a medium saucepan. Whisk to combine, then heat until steaming. Remove from heat and stir in the ice syrup and vanilla extract. Serve warm.

Creamy Almond Hot Chocolate

That’s right. Chocolate + maple syrup + roasted almond butter, all warmed together into a rich, warming drink that might just warrant some Kahlua for kicks.

Creamy Almond Hot Chocolate

1/4 cup water
1/4 cup unsweetened cocoa powder
2 tablespoons pure maple syrup
1 1/2 cups creamy unsweetened nondairy milk
2 tablespoons roasted almond butter
3 oz. non-dairy semi-sweet chocolate chips

Put the water, cocoa powder, and maple syrup in a medium saucepan. Bring to medium heat, whisking frequently, until no lumps remain. Whisk in the nondairy milk. Heat until the mixture is steaming. Remove from heat and add the almond butter and nondairy chocolate chips.

Let it stand about 1 minute. Insert an immersion blender, and blend until smooth. If you don’t have an immersion blender, you can put it directly into a blender once it has cooled a little longer.

Pear-Ginger-Orange Tea

Simple and satisfying, this tea is bright and balanced, and will warm you up on the coldest of days.

Pear Ginger Orange Tea

1 1/2 cups water
1/2 cup freshly squeezed orange juice (from an orange! Not a carton)
1 teaspoon lemon juice
1 heaping tablespoon fresh ginger, grated
1 large, very ripe pear, grated

Put the water, orange juice, lemon juice, ginger, and pear in a medium saucepan. Bring to a boil, then reduce to medium-low heat and let simmer for 30 minutes. Strain the mixture into two mugs, pressing the pulp to get all the flavor. Serve warm.
