Southwest SunButter Kale Salad

The thing I love about baby kale is it’s mellow flavor and tender texture that lends itself perfectly to salads and slaws. You don’t have to worry about giving it a super massage session or letting it meld overnight to tenderize. Instead, you make, toss, and eat. That’s just the way I like it.

This Southwest SunButter Kale Salad is a way to make that kale shine. It uses a SunButter-based southwest-inspired dressing that’s sweet, spicy, creamy, and smoky, and the addition of grated sweet potato, red pepper, and fresh corn give it some crunch. The black beans round it out to a full meal with an added protein boost.

SunButter-Coconut-Raisin Cookies

You can’t really go wrong with any kind of cookies, but when you’re mixing up SunButter with coconut and raisins, well, you have a winner that’ll be a fast favourite in no time. Dense, moist, and crunchy, these cookies are quick to put together and easily adaptable. In the mood for chocolate? Swap out those raisins for chocolate chips, or add a handful as you go. Want a little more crunch? A few spoonfuls of sunflower or pumpkin seeds will do the trick.

The recipe makes large cookies, but you can scale down the size – drop by tablespoonfuls for a two-bite treat and bake 6 to 8 minutes, instead.

SunButter Butter Tarts

Butter Tarts. Sounds a little Canadian, don’t you think? My standby classic recipe is found in The Allergy-Free Cook Makes Pies and Dessertsbut when I had the opportunity to make one more holiday favourite using SunButter, I felt that a twist on the original was the way to go!

If you don’t know, Butter Tarts are traditionally a mixture of butter, brown sugar, and (optionally) raisins or pecans, all baked into a flaky pastry crust. This version does double duty with a little SunButter both in the crust and in the filling. Raisins are added for good measure, but if you’re staunchly against them, just leave ’em out.
